- 1 cup tomato sauce
- ½ cup feta cheese
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp ground cumin
- ½ tsp smoked paprika
- ½ tsp red pepper flakes or Cayenne pepper
- ¼ tsp salt
- Garnish: fresh parsley or cilantro (optional)
- Sourdough toast (optional)
Directions

Heat 2 tbsp of olive oil in a skillet over medium heat. Add the red bell pepper and minced garlic. Sauté for 3-4 minutes until softened.

Stir in cumin, smoked paprika, red pepper flakes (or Cayenne), and tomato sauce. Cook for another 3-4 minutes until the sauce thickens slightly.

In a bowl, whisk the eggs and the salt. Add the eggs to the skillet with the tomato sauce and gently fold them together until the eggs are soft and just set (the eggs should be creamy).

Turn off the heat. Sprinkle the feta cheese on top, garnish with fresh parsley or cilantro and serve with toasted sourdough bread, if desired.
Notes:
- Can opt for chunky tomato sauce if desired.
- Mozzarella cheese is a great alternative option for this recipe.

It was very good! Simple and quick to make. I ate with mini naans because I didn’t have sourdough bread. However the sourdough would have been delicious and a healthier choice.

I first had this dish about a year ago while away on a trip. However it was always made in the restaurants with poached eggs, not scrambled. Just another idea.
Sounds like an interesting recipe which I will try as I love eggs; however, that will have to be done before and put in the fridge as I don’t have the time on morning to make it. I use oatmeal with several different fruits in my oatmeal for breakfast, for about 4 days a week. Is that considered a healthy breakfast?
As a Yemeni I can say that this recipe is quite good but is missing on thing which is a bit of sugar which is optional if you don’t want it to be sweet as far as I know everything else is added and included, I also tried this recipe and it is good.
